Spector notes that this shift can significantly enhance gut health. “I think it’s quite novel as a concept of looking for every meal to see, ‘What can I add to it?’ rather than, ‘What’s the bare minimum I can do for it to be tasty?’” he explains. The goal is to create meals that not only nourish but also delight the palate.

The cookbook reflects Spector’s findings from the American/British Gut Project, which demonstrated that the diversity of plant species consumed is more crucial for gut health than the specific type of diet one follows. This has led to the promotion of a flexitarian approach, where most meals are plant-based but can include occasional animal products.

Among the standout recipes are the spicy gochujang beans, eggplant parmigiana, and pecan chocolate cookies. Each dish is crafted to provide nutritional benefits without compromising on taste.

The recipe is straightforward: sauté the vegetables, add gochujang and beans, and simmer until thickened.
