Terroni’s New Cookbook Launches Amid Rapid Expansion in Toronto
UPDATE: Terroni, Toronto’s beloved Italian restaurant chain, has just launched a new cookbook, marking a significant milestone in its journey from a humble deli to a dining empire with over a dozen locations. Co-founder Cosimo Mammoliti unveiled “La Cucina di Terroni” earlier this month, featuring more than 100 recipes that span three decades of culinary innovation.
This release comes at a pivotal time as Terroni continues to expand, with a new location recently opened in Los Angeles. The cookbook, priced at $50, offers home cooks a taste of the restaurant’s signature dishes, including the popular Rigatoni Acrobaleno and a variety of pizzas, antipasti, and desserts.
Mammoliti stated, “I thought it would be nice to have something to pass on to my four kids, and after 33 years, it would be nice to share the recipes for people who can’t come to the restaurant or want to try making it at home.” His passion for authentic Italian cuisine is evident as he collaborates with executive chef Giovanna Alonzi to curate the recipes.
Originally established in 1992, the first Terroni location in Trinity Bellwoods started with an $8,000 budget and a vision to serve casual, authentic Italian food. Mammoliti reminisced, “Back then, Terroni was a cramped deli serving $4 sandwiches,” a far cry from the expansive menu offered today.
The name “Terroni” remains a topic of conversation. Derived from a term historically used to describe southern Italians, it has been transformed in the context of the restaurant into a badge of pride. Mammoliti reflects, “We’re proud of who we are. I’m glad we called it that.” This reclamation of a slur resonates deeply with the immigrant experience and the culinary landscape of Toronto.
As Terroni grows, so does its commitment to quality. The pizza dough now undergoes a two-day ferment process, ensuring authenticity in every bite. The expansion of offerings includes house-made pastas, breads, and pastries, all crafted with care and tradition.
The restaurant’s impact is felt far beyond its walls, as it has become a cultural staple in Toronto, drawing in crowds for both its food and its vibrant atmosphere. With a focus on making fine dining accessible, Mammoliti’s vision has successfully catered to a diverse clientele, allowing everyone to enjoy a taste of Italy.
